Why add it to guacamole?

Olive oil in guacamole:

I add olive oil to guacamole for a couple of reasons. First, my Sweetcycle recipes are generally blended by machine or with pedal power. And for the blender blades to engage, we need a liquid— olive oil works. The second reason to use olive oil is that it slows the oxidation of the green avocados. In other words, the guacamole does not turn brown as easily or as quickly. Olive oil has great underlying flavor. It adds a creamy mouthfeel as well.
