Melon, Pineapple, Cucumber, Mint, Lychee Smoothie with UBS Weehawken
Smoothie: Cantaloupe Melon, Pineapple, Cucumber, Fresh Mint Leaves, Lychee Juice
Ingredients:
4 oz. fresh frozen melon
4 oz. fresh frozen pineapple
4 oz. fresh frozen cucumber
1/2 banana
6 mint leaves
12 oz. lychee juice
Blend it up with pedal power or your electric blender.
Lemon Verbena Coconut Rice Milk
Ingredients:
1 can coconut milk (13.6 oz)
1 qt. water
4 oz. honey
1/2 teaspoon salt
2 tablespoons rice flour
1 tablespoon lemon verbena leaves or other fresh herb
*1/2 teaspoon sunflower lecithin, optional to emulsify the milk so it does not separate
Heat up the coconut milk, water, honey, salt until almost boiling. Add the rice flour and whisk vigorously. Add the herbs and simmer for 1 minute. Whisk in the optional lecithin and allow the infused milk to steep for 5 minutes before straining. Chill.
Smoothie: Strawberry, Banana, Blueberry with Lemon Verbena Coconut Rice Milk
Ingredients:
4 oz. fresh frozen strawberries
4 oz. fresh frozen blueberries
1 banana
1 cup infused coconut rice milk
Blend it up with pedal power or your electric blender.
